Vietnamese Poached Chicken Salad with Paw Paw & Soba Noodles



270g Hakubaku Organic Soba noodles
1 Paw Paw, ripe, roughly chopped
2 Carrot, finely sliced
500g Chicken, in pieces
1 Onion, finely chopped
2 tbs each Coriander, flat parsley, mint & basil, chopped
2 cloves garlic, roughly chopped
2 tbsp honey
1 juice of lemon
1/2 cup apple cider vinegar
fish sauce, to taste


First thing to do is poach the chicken pieces in hot water, bring to the boil for a few minutes, put a lid on the pot and leave for 30 mins
Cook the Soba noodles as per instructions and make sure they are cold
Microwave the onion for 1 – 2 mins to soften
Mix all the paw paw, herbs, carrots and the onion in a bowl

For the Dressing, lightly fry the garlic to release flavours then add honey, lemon, vinegar and fish sauce, simmer for a few minutes then pour into a ramekin

Drain the Chicken, finely slice it up and add to the salad along with the noodles, really combine the ingredients,

Serve with the vinaigrette! Add Fresh chilli for a zing! Serve with a 7up lemonade,
