Vegetarian Quick Soup
SERVES: 3 DIFFICULTY: Easy
A soup that lives up to its name – Vegetarian and quick
INGREDIENTS
1 packet Hakubaku Organic Udon noodles
1 packet dried shiitake mushrooms, sliced
1 red onion, sliced
3 cloves garlic, chopped finely
1 tbsp extra virgin olive oil
dash of each sesame oil (good quality), black pepper
1 tbsp ginger, freshly grated
1 carrot, grated
1/2 lemon, juiced
2 tbsp honey
1/4 cup soya sauce
1/2 small fresh chilli, chopped
4 mugs cold water
3 spring onions, finely chopped

METHOD
Method
Soak dried mushrooms in boiling water for 30 mins
Fry onions ,garlic in oil till golden brown, careful do not burn.
Add pepper and soya sauce cook for 1 min, add honey ,and
Water immediately ,add all other ingredients except the noodles .
Cook till (first) boil add noodles for 1 min till warmed through
Serve in warmed bowls, sprinkle with chopped spring onions.
If you like finely shredded greens can be added for extra
nutrition, and decoration i.e.Bak Choy ,snow peas etc.
For a meat option, fish or meat could be added last minute in paper thin slices into the boiling soup mixture, just before you add the cooked noodles.
