400g Hakubaku udon noodles
3 large Onions (finely sliced then chopped)
200g Mushrooms (your choice, finely sliced)
2 Zucchini (cut in 1/4s lengthwise, then finely sliced
2/3 cup Bread crumbs
5tbsp Olive oil
Sea salt & ground pepper (for seasoning)
4 sprigs Fresh Coriander (for garnish)
Udon Noodles with Vegetables
Cook noodles according to packet instructions.
Drain, then set aside.
Heat the oil in a pan.
Add the vegetables and cook until slightly browned and soft.
Add the bread crumbs and cook until crumbs are golden brown.
Add noodles and gently toss to combine.
Remove from heat.
Place vegetable and noodle mixture into serving bowls.
Garnish with the sprigs of coriander.
