Teriyake Beef and Ginger with Soba Noodles
SERVES: 4 DIFFICULTY: Easy
A simple teriyaki dish with fresh colours and great flavours
INGREDIENTS
270g Hakubaku soba noodles
750g Beef strips
250g Broccoli florets
250g French beans (trimmed, 3cm lengths, cut diagonally)
115g Baby corn (rinsed, drained)
120g Bean sprouts
20g Fresh ginger (grated)
80ml Teriyaki sauce
125ml Hoisin sauce
2tbsp Mirin
1tbsp Peanut oil

METHOD
STEP ONE:SOBA NOODLES
Cook noodles according to packet instructions.
Drain, then refresh under cold running water.
Drain well, then set aside.
STEP TWO:TERIYAKI SAUCE
In a small jug or bowl, combine the teriyake and hoisin sauces with the mirin.
Set aside.
STEP THREE:BEEF STRIPS
Heat half the oil in a wok.
Working in small batches, stir-fry beef until browned.
Set aside.
STEP FOUR STIR-FRY
Add the remaining oil to wok and heat.
Stir fry broccoli until tender-crisp.
Return beef to wok and stir-fry along with the sauce mixture, beans, baby corn and ginger, until vegetables and beef are cooked (to your liking).
Add the soba noodles and toss gently to combine.
STEP FIVE:SERVING
Divide stir-fry between 4 serving plates.
Garnish by sprinkling with bean sprouts
Serve hot.
