Somen with Prawns and Asparagus
SERVES: 1 DIFFICULTY: Medium
As per the instructions DO NOT OVERCOOK THE PRAWNS! Simple when done right.
1 bundle Hakubaku Organic Somen noodles
1/4 cabbage, finely shredded (or rocket)
1 punnet cherry tomatoes
1/4 cup + vegetable stock
1 bundle fresh asparagus, cutin into 3cm pieces
1/2 kilo green prawns
1.Cook noodles as per instructions,in frying pan.
2.Cook prawns DO NOT OVER COOK remove and set aside keeping warm.
3.To pan add tomatoes cook for a few minutes till soft I use a masher to break them just a little.
4. Add asparagras cook a little longer add stock toss and bring to boil add prawns and then noodles toss and serve.
