Somen Stir-fry with Pork and Snow peas

SERVES: 4  DIFFICULTY: Easy   COOKING TIME: 10 minutes

A Somen stir-fry to delight the taste buds

INGREDIENTS

  • 270g Hakubaku Organic Somen
  • 2 tsp sesame oil
  • 600g pork fillet, thinly sliced (or stir-fry strips)
  • 1 tbsp vegetable oil
  • 1 clove garlic, crushed
  • 250g snow peas, finely sliced
  • 3 carrots, julienned
  • 3 celery stalks, julienned
  • 125ml chicken stock
  • 2 tbsp sesame seeds
  • 2 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 1/2 tsp vegetable stock powder

METHOD

  1. Prepare Hakubaku Organic Somen as per packet direction. Drain and place in a bowl. Stir through sesame oil and set aside.
  2. Heat vegetable oil in wok. Add crushed garlic and stir-fry on high for 30 seconds. Add pork, stir-fry for a minute then add snow peas, carrot and celery. Stir-fry for 2-3 minutes until the pork is cooked through and the vegetables are hot but still crisp. Add to the bowl of Somen.
  3. In a small bowl, mix together the chicken stock, soy sauce, rice wine vinegar and vegetable stock powder.
  4. Pour the dressing over the over the Somen mixture. Stir gently to combine, sprinkle with sesame seeds, then serve.
