
Soba Noodles with Sesame Seed Dressing and Vegetables
SERVES: 3 DIFFICULTY: Medium COOKING TIME: 5 minutes
Leave yourself enough time for this dish to sit and let the flavours meld

INGREDIENTS
- 270g Hakubaku soba noodles
- 70g Sesame seeds (toasted)
- 30ml Balsamic vinegar
- 10g Sugar
- 40ml dark Soy sauce
- 1 clove Garlic (minced)
- 5ml Dark sesame oil
- 5 Spring onions (finely sliced, diagonally)
- 275g Small broccoli florets, steamed
METHOD
- In a large mixing bowl, combine the vinegar, sugar, soy sauce, sesame oil, garlic and spring onion. Set aside.
- Cook the noodles according to packet instructions. Drain well, then add to sauce along with the sesame seeds. Toss gently to combine.
- Add broccoli florets and allow dish to sit for 30 minutes at room temperature.
- Place noodle mixture onto a serving platter and serve.
Note: if you like your broccoli crunchy, you can skip steaming it and simply mix it in raw.
