Soba Noodles with Sesame Seed Dressing and Vegetables

SERVES: 3  DIFFICULTY: Medium   COOKING TIME: 5 minutes

Leave yourself enough time for this dish to sit and let the flavours meld

INGREDIENTS

  •     270g Hakubaku soba noodles
  •     70g Sesame seeds (toasted)
  •     30ml Balsamic vinegar
  •     10g Sugar
  •     40ml dark Soy sauce
  •     1 clove Garlic (minced)
  •     5ml Dark sesame oil
  •     5 Spring onions (finely sliced, diagonally)
  •     275g Small broccoli florets, steamed

METHOD

  1. In a large mixing bowl, combine the vinegar, sugar, soy sauce, sesame oil, garlic and spring onion. Set aside.
  2. Cook the noodles according to packet instructions. Drain well, then add to sauce along with the sesame seeds. Toss gently to combine.
  3. Add broccoli florets and allow dish to sit for 30 minutes at room temperature.
  4. Place noodle mixture onto a serving platter and serve.

Note: if you like your broccoli crunchy, you can skip steaming it and simply mix it in raw.
