500g Hakubaku soba noodles
100g Tatsoi leaves (or chinese cabbage)
2tbsp Sesame seeds (toasted)
100ml Rice vinegar
50ml Light soy sauce
3tsp Lemon juice
Soba noodle, Tatsoi and Sesame Salad with Ponzu Dressing
STEP ONE:SOBA NOODLES
Cook noodles according to packet instructions.
Drain, then refresh under cold running water.
Drain well and set aside.
STEP TWO:PONZU DRESSING
Place the rice wine vinegar, light soy sauce and lemon juice into a small bowl and mix until combined.
Set aside 3 tatsoi leaves.
In a large serving bowl, place the noodles, remaining tatsoi leaves and sesame seeds.
Add the ponzu dressing.
Toss gently until combined.
Finely shred the remaining 3 tatsoi leaves and place on top of noodle salad.
