Snowpea, Sesame, Salmon with Soba

Everything ‘S’ to make a Sumptuous meal

INGREDIENTS
180g of Hakubaku Soba noodles
150g snow peas
600g skinless salmon fillets
1/4 cup sesame seeds
2tsp coconut oil
1/2 continental cucumber de-seeded, halved and slice diagonally
1/2 red onion thinly sliced
Dressing
2Tbs lemon juice
1Tbs rice wine vinegar
2 tsp grated ginger
1tsp sesame oil
1/2 tsp caster sugar
METHOD
Step 1
Cook noodles in boiling water as per packet instructions adding the snow peas for the final minute. Drain and refresh in cold water.
Step 2
Season the salmon and press the sesame seeds into both sides. Heat pan and add coconut oil. Cook salmon turning when seeds are brown – about 4 mins each side in medium heat pan. Remove from pan and rest for 2 mins then slice.
Step 3
Place noodle mixture and cucumber, onion into large bowl. Dress with 3/4 of the dressing.
Step 4
Place noodle mixture on plates and top with salmon and remaining dressing!
