Sesame Somen Salad w/ Smoked Salmon

Ingredients
4 x 90g Hakubaku Somen Noodles
1/4-1/2 cup soy sauce
2 tablespoons Brown Sugar
1/4 cup Sesame seeds, toasted
2 Spring Onions, Sliced
1/4 cup Chopped Coriander
2 Cucumber, thinly sliced
200g Smoked Salmon slices, roughly chopped

Sesame Somen Salad w/ Smoked Salmon
Method
Cook the noodles according to packet instructions or until cooked through. Drain and set aside to cool. Combine the soy sauce, brown sugar and sesame seeds in a large bowl. Add the noodles, spring onions, coriander, cucumbers, and salmon. Toss gently to combine. Divide the noodle salad between four serving plates and serve.
