
Seared Beef Fillet with Chilli, Shiitake Mushrooms and Soba Noodles

INGREDIENTS
2tsp Sambol oelek
1/4 cup Balsamic vinegar
2tsp Ginger (grated)
270g Hakubaku soba noodles
1/4 cup Olive oil
2tsp Olive oil (extra)
500g Beef eye fillet
100g Fresh shiitake mushrooms (finely sliced)
1/4 cup Basil leaves (chopped)

METHOD
STEP ONE:MARINADE
Combine sambal oelek, basalmic vinegar, ginger and oil and pour over eye fillet.
Marinate for 30 minutes.
STEP TWO:BEEF EYE FILLET
Heat oven-proof frypan on high heat.
Reserving marinade, remove eye fillet and sear for 1 minute on each side.
Place in a pre-heated oven (220 degrees celsius) and roast for 15 minutes.
Rest fillet for 10 minutes.
STEP THREE:SOBA NOODLES
Cook soba noodles according to packet instructions.
STEP FOUR:SHIITAKE MUSHROOMS
Heat olive oil in a fry pan on medium heat.
Cook mushrooms for 5 minutes, then reduce heat and add reserved marinade.
STEP FIVE:SERVING
Slice eye fillet thinly.
Place noodles on four plates and pour over mushrooms.
Lay on the beef slices.
Garnish with chopped basil leaves.
