Pumpkin, Spinach and Sesame Soba noodles

270g Hakubaku Organic Soba noodles
1 cup pumpkin, finely sliced
1 cup mushroom, sliced
5 handfuls spinach or silverbeet (roughly chopped)
1 tsp giinger, finely chopped
2 tbsp light soy sauce
few drops sesame oil
1 tbsp sesame seeds
1 tbsp cooking oil


Pumpkin, Spinach and Sesame Soba noodles



Fry pumkin in oil, until brown. Add ginger, and mushrooms and continue to fry until mushrooms are cooked.

Add spinach and soy sauce, and sesame oil. Once spinach is wilted it is ready to serve!!
Just pop it on a plate next to a bundle of hot soba noodles and sprinke with sesame seeds. Yum.

Maybe a bit more soy to taste if you like. Or even a little chilli can be nice.
