2 x 270g Hakubaku Organic Udon noodles
1 onion, finely diced
2 garlic cloves, diced
olive oil
2 cans chopped tomatoes
handful capers
1 kg prawns
1 lemon, juiced
salt and pepper


Prawns in tomato Garlic sauce with Udon noodles – Summer 2012 Merit



1. Fry onion, garlic in a splash of olive oil.
2. When soft add tomatoes and salt and pepper and lemon juice, and capers. Boil gently, stirring occasionally for about 15 mins.
3. Cook noodles as per the packet instructions. If the prawns are green add them to the sauce and cook for about 5 mins, if they are cooked add to the sauce and warm through.
4. Serve the sauce on top of the noodles, tear some basil and sprinkle over the top and add a couple of pieces of marinated feta.

Serves 6.
