Japanese Soba Noodle Salad

SERVES: 1  DIFFICULTY: Medium   COOKING TIME: 4 minutes

A simple salad – but you can add what you have on hand

INGREDIENTS

  • 1 bundle Hakubaku Organic Soba noodles
  • 6 cherry tomatoes
  • 1 chicken breast, cooked
  • 6 cucumber slices
  • 2 tsp Japanese Kewpie Mayonnaise
  • salt and pepper to taste

Optional extras: edamame beans, carrot, spring onions, bene shoga

METHOD

Cook Hakubaku Soba noodles for 4 minutes in boiling water. Once cooked drain under cold running water until noodles are cold. Once noodles are cold place noodles into a bowl and add 6 cherry tomatoes halved, 1 chicken breast chopped into cubes, 6 slices of cucumber and 2 teaspoons of Japanese Kewpie Mayonnaise. Mix well, add Salt and Pepper to taste, and Enjoy.

Time 10 minutes from preparation to eat.
