Ingredients for sauce for 2 servings:
1/4 cup low sodium soy sauce
1 tablespoon sesame oil
1 tablespoon ginger (paste or fresh)
1 1/2 tablespoon raw honey
Ingredients for pasta for 1 serving:
6oz cooked chicken breast (or your choice of protein)
2oz (56g) whole wheat soba noodles
1 cup broccolini
2/3 cup chopped cremini mushrooms
1/2 tablespoon garlic
Healthy Chicken Soba
Cook soba noodles.
Mix together all of the ingredients for the sauce and set it aside.
With a medium high heat and spray with a little olive oil. Add the garlic and mushrooms and cook for about 3 minutes.
Then, toss in chopped broccolini and sear for another 5 minutes.
Allow the vegetables and chicken to cool down and then mix the noodles with the vegi. Add chicken and half of the sauce.
Stir. Garnish with sesame seeds.
