Hakubaku Somen Noodles with Onion-Pepper Sauce
SERVES: 4 DIFFICULTY: Easy
Onions and capsicums (peppers if you prefer) just plain ol’ go together.
INGREDIENTS
300g Hakubaku somen noodles
1 Onion (finely sliced)
1 of each Medium red, green & yellow peper (finely sliced)
1/4 cup Vegetable broth
1 clove Garlic (minced)
1tsp Ginger (minced)
1tbsp Hoisin sauce
Olive oil or cooking spray (for cooking)
4 sprigs Fresh parsley

METHOD
STEP ONE:SOMEN NOODLES
Cook noodles according to packet instructions.
Drain, then refresh under cold running water.
Set aside.
STEP TWO:ONION-PEPPER SAUCE
Lightly oil non-stick pan and add vegetabale broth.
Add ginger and garlic.
Cook over medium heat, stirring frequently, until it comes to the boil.
Add peppers and onion, stirring frequently, and cook for 6-8 minutes until vegetables are tender.
Stir in hoisin sauce.
Add somen noodles, tossing gently to combine.
STEP THREE:SERVING
Divide amoung 4 serving bowls.
Garnish with parsley sprigs.
Serve immediately.
