Somen Cap Onion Small

Somen with Onion & Capsicum

SERVES: 4  DIFFICULTY: Easy   COOKING TIME: 10 minutes

Onions and capsicums (peppers if you prefer) just plain ol’ go together.

INGREDIENTS

  • 270g Hakubaku Organic Somen
  • 1 Onion (finely sliced)
  • 1 of each Medium red, green & yellow pepper (finely sliced)
  • 1/4 cup Vegetable broth
  • 1 clove Garlic (minced)
  • 1tsp Ginger (minced)
  • 2 tbsp Hoi-sin sauce
  • Olive oil or cooking spray (for cooking)

METHOD

1. Cook noodles according to packet instructions. Drain, then refresh under cold running water. Set aside.
2. Lightly oil non-stick pan and add vegetable broth. Add ginger and garlic. Cook over medium heat, stirring frequently, until it comes to the boil.
3. Add peppers and onion, stirring frequently, and cook for 6-8 minutes until vegetables are tender.
4. Stir in hoi-sin sauce. Add somen noodles, tossing gently to combine.
5. Divide among 4 serving bowls. Serve immediately.

Optional: Fresh parsley for garnish, extra broth for soup.
