Hakubaku Coleslaw

SERVES: 4  DIFFICULTY: Medium   COOKING TIME: 4 minutes

Level up your coleslaw with crunch from unexpected ingredients – a terrific side dish

INGREDIENTS

  • 270g Hakubaku Organic Ramen noodles
  • 1/2 green cabbage, finely sliced
  • 1/2 red cabbage, finely sliced
  • 1 cup spring onions, cut into rounds
  • 1/2 cup sesame seeds, lightly dry-toasted
  • 1/4 cup almonds, lightly dry-toasted

DRESSING

  • 2 tsp sugar
  • 1.5 tbsp rice vinegar
  • 1.5 tbsp canola oil
  • 1 tsp sesame oil
  • salt and pepper to taste

METHOD

  1. Cook Hakubaku Organic Ramen as per pack instructions. Drain, rinse and drain again. Place in a large bowl and set aside.
  2. Place all dressing ingredients in a jar. Shake well to combine.
  3. Place sliced green and red cabbage, spring onions, sesame seeds and almonds in the bowl of Ramen.
  4. Just before serving, pour dressing over and gently mix through.
