Easy Soba Noodle Salad with Wakame
SERVES: 4 DIFFICULTY: Easy
A great introduction to wakame if you have never used it at home before.
INGREDIENTS
270g Hakubaku soba noodles
20g Wakeme (seaweed)
2 Cucumbers (de-seeded, finely julienned)
2 Carrots (finely julienned)
1 handful Bean sprouts
4 Spring onions (finely sliced, diagonally)
20g Fresh ginger (grated)
1tbsp Sesame oil
Juice of 1 Lime
1tbsp Tamari
4tbsp Sesame seeds (toasted)
METHOD
STEP ONE:WAKAME
In a small bowl, place the wakame and cover with cold water.
Let stand until wakame is softened (about 10 minutes).
Drain, then remove any hard stems and shred finely.
STEP TWO:SOBA NOODLES
Cook noodles according to packet instructions.
Drain, then refresh under cold running water.
Drain, the place in large serving bowl.
STEP THREE:SERVING
Place the wakame and all other ingredients with the noodles.
Gently toss to combine.
Serve cold as a meal or a tasty side dish.
