Easy Satay Sauce with Beef and Udon Noodles

SERVES: 4  DIFFICULTY: Easy 

Peanut butter in the pantry is the basis for a great satay dish

INGREDIENTS

270g Hakubaku udon noodles
750g Beef strips
1 long Red chilli (finely sliced)
1 Brown onion (finely sliced)
1 medium Red capsicum (finely sliced)
Fresh mint leaves (for garnish)
1tbsp Peanut oil
140g Crunchy peanut butter
125ml Coconut cream
60ml Sweet chilli sauce
1tbsp Japanese soy sauce
40g Roasted peanuts (chopped)
|Udon

METHOD

STEP ONE:UDON NOODLES
Cook noodles according to packet instructions.
Drain, then refresh under cold running water.
Drain well, then set aside.

STEP TWO:BEEF
Heat half the oil in a wok.
Stir-fry beef strips (in small batches) until cooked to your liking.
Remove from wok and set aside.

STEP THREE:VEGETABLES
Heat the remaining oil in the wok.
Stir-fry the onion, capsicum and chilli until soft.
Remove from wok and set aside with the beef.

STEP FOUR:SATAY SAUCE
Stir together, the peanut butter, coconut cream, soy and sweet chilli sauces, to combine.
Bring to the boil, then return the beef and vegetables to the wok stirring to combine.
Add the noodles and gently toss to combine.
When heated through, remove from heat.

STEP FIVE:SERVING
Divide the stir-fry between 4 deep serving bowls.
Garnish with fresh mint leaves and a sprinkling of chopped peanuts.
