Duck Salad with Soba Noodles and Plum Sauce
SERVES: 4 DIFFICULTY: Medium
Soba noodles simply work with Duck and plum sauce – don’t ask me why.
1tbsp Vegetable oil
1 Small red chilli (de-seeded & chopped)
6tbsp Plum jam
2tsp Ginger (grated)
2tsp Sesame oil
270g Hakubaku soba noodles
1 Chinese barbequed duck
1/2 Cucumber (cut into batons)
7 Spring onions (chopped)
1 handful Coriander (chopped)
STEP ONE:PLUM SAUCE
Heat vegetable oil in a saucepan.
Add chilli and cook for one minute.
Add plum jam, ginger, sesame oil and mirin.
Stir until combined and set aside.
STEP TWO:SOBA NOODLES
Cook noodles according to packet instructions.
Drain and toss with half the sauce.
Remove the meat from the duck and shred.
Divide the noodles between 4 serving bowls.
Add the duck, cucumber and onion and drizzle with the remaining sauce.
Top with chopped coriander.
