Cucumber, Prawn & Noodle Salad
SERVES: 4 DIFFICULTY: Easy
INGREDIENTS
175g Hakubaku Somen Noodles
500g Cooked prawns, peeled, deveined
2 Lebanese cucumbers, cut into strips
1/2 cup Coriander leaves
1/2 cup Mint leaves
1 Large garlic clove, chopped
1 Lime, rind and juice
80ml Vegetable Oil
Iceberg Lettuce cups

METHOD
1. Prepare noodles according to packet directions. Combine with prawns and cucumber strips.
2. Place herbs, garlic, lime rind and juice in a food processor and pulse until chopped. With machines running, add oil in a steady stream until smooth. Season. Place noodle mixture in lettuce cups and drizzle over dressing.
