Coriander and Peanuts with Ramen
SERVES: 4 DIFFICULTY: Easy
Do you like Coriander? Here’s a simple fusion dish to try.
2 cups of finely chopped coriander
2 cloves of finely chopped garlic
1 inch of finely chopped ginger
1/4 cup raw peanuts
1/3 cup grated parmesan
a little chilli
1/2 cup peanut oil
3 x 90gm Hakubaku organic ramen noodles
1. Place all ingredients (except oil and ramen) in mortar and blend to a rustic texture – then add oil and mix.
2. Cook ramen as directed on back of packet. Refresh ramen with boiling water and drain again.
3. Warm coriander mixture and noodles to desired temperature.
