Cold chicken slices with Soba and garlic sauce

Ingredients

270g Hakubaku organic Soba (cooked & cooled)
2 small  chicken fillets (trimmed and sliced thin)
2    spring onions (angle thinly sliced)
1 tbsp fresh ginger (grated)
2 tbsp rice wine
2 tbsp extra virgin olive oil
2 cloves garlic
2 tbsp dark soy
1 tsp chilli oil
1 tbsp mirin
1 tsp sugar
½ cup  coriander sprigs

Method

Method

  1. Combine together the raw chicken slices, spring onions, ginger, rice wine and olive oil. Pre heat a grill pan and quickly grill on both sides until just cooked and spread out slices onto the four plates.
  2. Present the cooked chilled noodles over the chicken slices.
  3. Combine together the garlic, soy, mirin, sugar and chilli oil. Toss in the noodles, coat well and place neatly onto the chicken slices. Garnish with the coriander sprigs.
