Chilli Ginger Udon Noodles

270g Hakubaku Organic Udon noodles
3 garlic cloves, roughly chopped
1 onion, cut finely
2 shallots
250g mushrooms
1 capsicum, chopped
1 broccoli, chopped
1/4 cup hoisin sauce
1 tbsp fresh ginger, finely chopped
to serve fresh chilli, chopped


Chilli Ginger Udon Noodles


1. Bring onions, garlic and shallots to the fry pan. A small amount of coconut oil is best to fry with.

2. While they are cooking, add Hakubaku Udon noodles to a pot of rapidly boiling water. Boil for 8 minutes.

3. Add mushrooms, broccoli, and chopped capsicum to the onion mix. Stir in fresh ginger.

4. Combine noodles with vegetable mix and add hoisin sauce.

Garnish with fresh chilli and enjoy!
