Chilli Chicken Soup

SERVES: 1  DIFFICULTY: Easy   COOKING TIME: 10 minutes

Chicken Soup makes the winter blues disappear and this soup will make you look forward to a cold day.

INGREDIENTS

  • 90g Hakubaku Organic Soba noodles
  • 500ml low salt prepared chicken stock
  • 100g cooked chicken, chopped
  • 50g corn kernels
  • 1 tsp, or to taste, chilli paste (or chopped chilli)
  • 1 tbsp miso paste
  • 2 spring onions, chopped

METHOD

  1. Boil and drain Soba as per packet instructions.
  2. Heat chicken stock, add chicken pieces, corn kernels, chilli paste and miso paste and stir well.
  3. Refresh Soba in hot water, drain again and place Soba in a bowl.
  4. Pour soup over Soba, top with spring onions and enjoy.
