Chicken Teriyaki with Soba, Bok Choi and Broccoli

This is the recipe that all of the family will love
INGREDIENTS
6 Chicken thighs
Hakubaku Soba noodles
1 bunch of Bok Choy
4 stems broccoli
For the Marinade
1 tablespoon sugar
1 clove garlic
1/2 cup soy sauce or tamari
1/2 cup mirin
1 tablespoon grated fresh ginger
1/2 teasp sesame oil
Garnish
Toasted sesame seeds
spring onions
METHOD
Step 1
In a mortar and pestle grind the clove of garlic with 1 teaspoon of sugar into a paste then add the remaining sugar, soy sauce, mirin, ginger and sesame oil – mix thoroughly.
Pour marinade over chicken thighs and leave for 15 mins or overnight if you have the time.
Step 2
Cook the chicken in a moderate oven for 40 mins – turning the chicken in the marinade a couple of times.
Step 3
Cook the soba noodles in boiling water. Steam the broccoli and bok choi.
Step 4
Serve the soba noodles in a bowls place the chicken on top. Serve the broccoli and bok choi.
Pour the sauce from the chicken over the chicken, noodles and vegetables in the bowl.
Garnish with sesame seeds and spring onions
