Chicken and Somen Noodle Salad
SERVES: 4 DIFFICULTY: Easy COOKING TIME: 5 minutes
A fine summer salad that contains all that is delectable, yet is not too heavy on a hot day.
INGREDIENTS
270g Hakubaku Organic Somen noodles
1 lebanese cucumber, cut into sticks
1 spring onion, sliced
1/2 red capsicum, finely sliced
1 can corn kernals, small
2 chicken breasts, cooked and sliced
3 button mushroom, sliced
1 carrot, peeled and finely sliced
1 handful coriander leaves
DRESSING
1 tsp each ginger, finely grated, and sesame oil
1 tbsp each lemon juice and soy sauce
1/2 tbsp rice vinegar
1/2 tsp sugar
METHOD
Method
1. Cook noodles to packet instructions, rinse and drain.
2. Put all salad ingredients in a large bowl and combine.
3. Mix together dressing then mix with the noodles.
4. Add noodles to the salad and mix well.
Serve and enjoy.
