Chasoba with Spicy Sauce

SERVES: 2  DIFFICULTY: Easy   COOKING TIME: 6 minutes

Summer eating at its finest. Spicy yet so refreshing.

INGREDIENTS

130gm Hakubaku Organic Chasoba noodles
1/3 cup soy or tamari sauce
1 tbsp fresh lime juice (or lemon)
1 heaped tsp fresh chilli (or chilli paste)
1 tbsp caster sugar
1 carrot, shredded
1 tbsp fresh ginger root, finely sliced
1/2 cup coriander, finely chopped
2 tbsp toasted sesame seeds, optional

METHOD

Mix soy, lime juice, chilli and sugar together until all combined.

Shred carrot and ginger and set aside. Chop coriander and set aside.

Bring a large pot of water to boil. Add noodles and stir. Return to boil and the noodles should be cooked in 6 minutes and pour through strainer. Run cold water over noodles, tossing with your hands until room temperature.

Place in serving dishes and top with sauce, tossing to coat.

Top with shredded carrot, ginger, and coriander. Finish with sprinkling of toasted brown sesame seeds.
