Cha Soba lettuce cups

Ingredients
1/3 packet Hakubaku organic cha soba noodles (cooked)
12 cooked king prawns (peeled and cleaned)
4 iceberg lettuce cups
1 carrot (grated)
1 cup trimmed snow pea sprouts
1 cup cucumber (peeled and cubed)
Dressing
2 tablespoons pickled ginger (finely sliced)
2 tablespoons extra virgin olive oil
2 tablespoons lime juice
1 tablespoon mirin
½ tablespoon sesame oil
Cha Soba lettuce cups
Method
Combine together the sliced pickled ginger, olive oil, lime juice, mirin and sesame oil.
Carefully fill the lettuce cups in layers, starting with the noodles, followed by the grated carrot, cucumber dice and the trimmed snow pea sprouts.
Top with the prawns and dress well with the Japanese dressing.
