Ingredients
200g hakubaku Organic Cha soba noodles
2-3 handfuls Roquette, fresh
3 pears, thinly sliced
zest of 1 lemon or lime
2-3 tbsp olive oil
3/4 cup Parmesan or goats cheese, crumbled or sliced
sea salt flakes to taste
1/2 cup sesame seeds
1/2 cup pine nuts
1/2 cup pistachio nuts
black pepper to taste
red chilli sliced into olive oil (optional)

Method
Method:
Boil the noodles as per packet directions. Rinse and set aside.
Lay the roquette leaves and pear slices straight onto the serving plates in a nice arrangement.
Mix the olive oil, zest, sesame seeds and black pepper in a small bowl toss through the noodles.
Make a small nest of the noodles on each plate (on top of the roquette and pears).
Sprinkle some pine nuts, cheese, salt flakes, and pistachios over each serve, and a bit more of the oil if desired.
Serve chilli-oil or other favourite sprinkles/drizzles on the side.
