Beef in Oyster Sauce with Soba Noodles

Ingredients
270g Hakubaku soba noodles
500g Beef strips
50g Snow peas
425g Baby corn (rinsed & drained)
6 Spring onion ( 2cm pieces, cut diagonally)
2tbsp Peanut oil
2 cloves Garlic (crushed)
2tbsp Oyster sauce
1tbsp Fish sauce
1tbsp Brown sugar
400g Bok choy
250g Gai lan
Beef in Oyster Sauce with Soba Noodles
Method
STEP ONE:SOBA NOODLES
Cook noodles according to packet instructions.
Drain, then refresh under cold running water.
Drain well, then set aside.
STEP TWO:STEAMING
Break bok choy and gai lan into large pieces and steeam until just tender.
Drain well, then set aside (keep warm)
STEP THREE:BEEF STRIPS
Heat oil in a wok.
Stir-fry garlic until fragrant, then add beef strips (in small batches) until browned and just cooked.
Set aside.
STEP FOUR:STIR-FRY
Add the snow peas, corn, onion, all the sauces and sugar to the wok and stir-fry until peas are crisp-tender.
Return beef and noodles to wok and stir-fry until heated through.
STEP FIVE:SERVING
Place the steamed vegetables on a serving platter.
Ladle the beef and noodle stir-fry on top.
Serve hot.
