Somen Stir-fry with Pork and Snow peas
SERVES: 4 DIFFICULTY: Easy COOKING TIME: 10 minutes
A Somen stir-fry to delight the taste buds

INGREDIENTS
- 270g Hakubaku Organic Somen
- 2 tsp sesame oil
- 600g pork fillet, thinly sliced (or stir-fry strips)
- 1 tbsp vegetable oil
- 1 clove garlic, crushed
- 250g snow peas, finely sliced
- 3 carrots, julienned
- 3 celery stalks, julienned
- 125ml chicken stock
- 2 tbsp sesame seeds
- 2 tbsp soy sauce
- 2 tbsp rice wine vinegar
- 1/2 tsp vegetable stock powder
METHOD
- Prepare Hakubaku Organic Somen as per packet direction. Drain and place in a bowl. Stir through sesame oil and set aside.
- Heat vegetable oil in wok. Add crushed garlic and stir-fry on high for 30 seconds. Add pork, stir-fry for a minute then add snow peas, carrot and celery. Stir-fry for 2-3 minutes until the pork is cooked through and the vegetables are hot but still crisp. Add to the bowl of Somen.
- In a small bowl, mix together the chicken stock, soy sauce, rice wine vinegar and vegetable stock powder.
- Pour the dressing over the over the Somen mixture. Stir gently to combine, sprinkle with sesame seeds, then serve.
