Garlicky Chicken Ramen

SERVES: 4  DIFFICULTY: Easy   COOKING TIME: 15 minutes

All the garlicky goodness!

INGREDIENTS

  • 270 Hakubaku Organic Ramen
  • 3 chicken thighs, bite-sized dice.
  • ½ cup soy sauce
  • ¼ cup mirin
  • 2 or 3 tbsp sugar (use less if you don’t like it too sweet)
  • 1 cup chicken stock
  • 6 cloves garlic, crushed
  • 3 spring onions, sliced diagonally
  • 4 eggs, medium boiled and halved
  • 2 tbsp olive oil
  • 1 tbsp sesame oil
  •  nori for garnishing
  • dried chilli flakes (optional)

METHOD

  1. In a bowl, combine soy sauce, mirin, sugar, chicken stock and garlic together and set aside.
  2. Heat olive oil in a frying pan, reduce heat and add chicken. Cook gently until done.
  3. Add the sauce mix to the frying pan and bring it to the boil. Reduce heat and simmer gently for 2 minutes.
  4. Prepare Hakubaku Organic Ramen as per pack instructions, drain.
  5. Add Ramen to the frying pan and toss gently to combine. Sprinkle with sesame oil.
  6. Place noodle/sauce mix in each serving bowl with spring onions, two egg halves and shredded nori.

Optional: A sprinkle of chilli flakes gives a nice hit of heat if you like.
