Chilli Lime Fish with Udon noodles
SERVES: 3 DIFFICULTY: Easy COOKING TIME: 15 minutes
A quick, healthy and easy meal that the whole family will love

INGREDIENTS
- 2 x firm skinless Hoki fish fillets
 - I packet Hakubaku Organic Udon Noodles
 - ½ cup chopped coriander leaves
 - 1 spring onion (shallot), chopped
 - 3 cups frozen vegetables, such as corn, baby peas and sliced carrot or steam fresh frozen vegetables. I used a stir-fry pack with a great selection.
 
Sauce – mix together
- ½ c Japanese style soy sauce,
 - 1 lime zested and juiced. (add a second if desired).
 - 1 Tablespoon sweet chilli sauce
 
METHOD
- Preheat oven to 180C
 - Make sauce and marinade fish fillets in it for 5 minutes in an oven proof baking dish.
 - Bake fish uncovered in oven for 10 – 15 minutes
 - Cook Udon noodles in boiling water as per packet, drain, refresh in boiling water, drain again and mix with chopped coriander and shallot
 - Microwave frozen vegetables per packet directions Serve fish with noodles and vegetables and pour remaining sauce over the noodles.
