Poached chicken with soba noodles
SERVES: 2 DIFFICULTY: Easy
A healthy and delicious mid week dinner with basic Japanese flavours.
INGREDIENTS
25 g ginger thinly sliced
3 cup chicken stock
2 teaspoon red miso
2 tablespoon soy sauce
1/2 teaspoon sesame oil
1 tablespoon oyster sauce
1 large chicken breast
100 g snow peas
2 shallots (optional)
90 g soba noodles
METHOD
Serves 2 adults
Step 1
Add ginger, stock, miso, soy sauce, sesame oil, oyster sauce to saucepan and boil for 5 mins. Should be deep golden colour.
Step 2
Add chicken to stock and boil for 10 to 12 mins until cooked. Remove and set aside.
Step 3
Add soba noodles and snow peas to stock and cook noodles as per packet directions
Step 4
Remove noodles, snow peas and arrange in serving bowl.
Thinly slice chicken and arrange in serving next to noodles.
Spoon over 2-3 tablespoons of stock to taste.
Top with sliced shallots (optional)
