Chilli Chicken Soup
SERVES: 1 DIFFICULTY: Easy COOKING TIME: 10 minutes
Chicken Soup makes the winter blues disappear and this soup will make you look forward to a cold day.
INGREDIENTS
- 90g Hakubaku Organic Soba noodles
- 500ml low salt prepared chicken stock
- 100g cooked chicken, chopped
- 50g corn kernels
- 1 tsp, or to taste, chilli paste (or chopped chilli)
- 1 tbsp miso paste
- 2 spring onions, chopped
METHOD
- Boil and drain Soba as per packet instructions.
- Heat chicken stock, add chicken pieces, corn kernels, chilli paste and miso paste and stir well.
- Refresh Soba in hot water, drain again and place Soba in a bowl.
- Pour soup over Soba, top with spring onions and enjoy.
