Pumpkin Pork Curry with Soba

SERVES: 4  DIFFICULTY: Easy 

Yum Yum Yum – perfect for winter.

INGREDIENTS

270g Hakubaku Organic Soba noodles
1 Heinz Pumpkin Soup (535g can)
1 tspn garlic, crushed
3 pork schnitzel, chopped into bite-sized pieces
1 tspn curry powder (or to taste)
1 cup seasonal vegetables

METHOD

Method:

1. Heat wok with little bit of spray oil, garlic and add pork and cook until cooked through.

2. Add and Stir fry vegetables, add pumpkin soup and curry powder.

3. Cook until soup has evaporated a little so it becomes a nice sauce consistency to your liking.

4. Cook Soba noodles. Serve curry on noodles. Enjoy!!
