My Legendary Thai Salad

SERVES: 2  DIFFICULTY: Medium 

INGREDIENTS

90g Hakubaku Organic Soba noodles
1 handful Rocket
1 handful Baby spinach
1/2 each red and yellow capsicum, sliced
1/2 cucumber, sliced
12 snow peas, sliced in half
1 small chilli, chopped
3 spring onions, sliced
sesame seeds
2 tbs Soy sauce
2 tbs olive oil
1 tsp Ginger and garlic, fresh chopped
1 tbsp brown sugar
500g Beef strips (optional)
|Soba

METHOD

Mix the rocket,spinach, capsicum, snow peas, chilli and spring onions together. Shake the dressing mix together in a jar and pour over the main Ingredients.
Cook the Soba noodles in boiling water for 10mins, drain and add to the Salad prepared above.
Sprinkle the whole finished Thai Salad with Sesame Seeds!
