Creamy Soba Summer Salad
SERVES: 4 DIFFICULTY: Medium
INGREDIENTS
270g Hakubaku Organic Soba noodles
1 cup Greek Yoghurt, light
1 cup green shallot tops, chopped
2 tbs ketjap Manis
1 red onion, finely chopped
1 small chilli, remove seeds & finely chop

METHOD
Cook 270 grams Organic Soba for 4 minutes in boiling water, drain, soak in ice water 5 minutes.
Drain noodles well and blend through salad dressing. Eat alone for quick snack or use as an addition to your favourite meat dish.
