Easy, Quick & Healthy Seafood & Noodle Consomme

SERVES: 4  DIFFICULTY: Easy 

The name says it all – Easy! Quick! and Healthy! (they forgot to add Delicious!)

INGREDIENTS

180g Hakubaku Organic Ramen noodles
1 1/2 litres water or stock
2 tbsp Hakubaku chilli soy sauce
500g fresh marinara seafood mix
3 onions cut small cubes
3 potatoes diced
1 cup fresh or frozen corn kernals
1/2 tsp ground coriander seed
1 tsp brown sugar
1/2 cup fresh chopped parsley

METHOD

Method:

Place all the ingredients, except the parsley, in a large heavy based pot, bring to boil, stir, then simmer until vegetables are cooked and liquid has reduced by a third; noodles and seafood will be cooked by this stage. Add parsley stir and add salt and pepper to taste is necessary. (Cook time approx. 15-20 minutes)

Serve in soup bowl and garnish with crutons and extra chopped parsley or chopped fresh chives.
