Beef Chow Mein

SERVES: 4  DIFFICULTY: Easy 

A real fusion dish – many parts of the world could claim this as their own.

INGREDIENTS

270g Hakubaku ramen noodles
500g Lean minced steak
1 Brown onion (finely chopped)
1 large Carrot (finely diced)
2 stalks Celery (finely sliced)
150g mixed Mushrooms (finely sliced)
60g Peas (fresh or frozen)
350g Cabbage or wombok (finely shredded)
1tbsp Olive oil
2 cloves Garlic (crushed)
1tbsp Curry powder
250ml Chicken or beef stock
80ml Oyster sauce
2tbsp Japanese soy sauce
|Ramen

METHOD

NOTE:- Any type of mushroom can be used in this dish or you can add a mixture such as button, shitake, swiss brown or oyster mushrooms.

STEP ONE:RAMEN NOODLES
Cook noodles according to packet instructions.
Drain, then refresh under cold running water.
Set aside.

STEP TWO:BEEF CHOW MEIN
Heat oil in a wok.
Add the garlic and onion stir-frying for about 30 seconds.
Add beef and stir-fry until browned.
Add curry powder and stir-fry until fragrant (about 1 minute).
Add carrot, mushroom, cabbage (if you are using wombok dont add it at this point) and celery and stir-fry until vegetables are just tender.
Add stock and sauces and stir-fry for about 2 minutes.
Add noodles, peas and wombok (if using) and gently stir-fry until heated through.

STEP THREE:SERVING
Divide between 4 deep serving bowls and serve hot.
