Sesame Noodle Salad with Snow Peas
SERVES: 4 DIFFICULTY: Medium
Salads don’t get any simpler than this.
INGREDIENTS
270g Hakubaku soba noodles
4tbsp Sesame seeds (toasted)
3 Spring onions (finely sliced)
4 Snow peas (finely sliced, diagonally)
1 Lemon (juiced)
2tsp Sesame oil
2tbsp Soy sauce

METHOD
STEP ONE:SOBA NOODLES
Cook noodles according to packet instructions.
Drain, then refresh under cold running water.
Drain well, then place in a large serving bowl.
Set aside.
STEP TWO:DRESSING
In a small bowl, combine the lemon juice, sesame oil and soy sauce.
set aside.
STEP THREE:SERVING
To the noodles, add the spring onion and snow peas.
Pour over the dressing and toss until well combined.
Serve alone or as a side dish eg. at the family barbeque.
