Chicken Teriyake Skewers with Somen Noodles
SERVES: 4 DIFFICULTY: Easy
Is there anyone here who doesn’t like teriyaki? No? I didn’t think so.
INGREDIENTS
500g Chicken Breast(cut into 2cm cubes)
60mls Teriyaki marinade
1 Green capsicum(cut into 2cm squares)
1 Red capsicum(cut into 2 cm squares)
2 Spring onions(cut into 3cm lengths)
270g Hakubaku somen noodles
Vegetable oil (for frying)
1tbsp Sesame oil

METHOD
STEP ONE:MARINADE
Combine chicken and teriyaki marinade in a shallow dish and turn to coat. Marinate for 20 minutes.
STEP TWO:CHICKEN TERIYAKI SKEWERS
Thread chicken, capsicum, and spring onion alternately onto skewers.
Lightly oil a hot chargrill with vegetable oil.
Cook skewers for 8-10 minutes, turning and brushing with the marinade.
STEP THREE:SOMEN NOODLES
Meanwhile cook the noodles according to packet instructions.
Drain then add sesame oil and toss to coat well.
STEP FOUR:SERVING
Serve skewers on a platter with the noodles.
Garnish with the extra spring onion.
