Seared Beef Fillet with Chilli, Shiitake Mushrooms and Soba Noodles
SERVES: 3 DIFFICULTY: Easy COOKING TIME: 20 minutes
The name says it all – just amazingly tasty!
INGREDIENTS
- 3 tsp Sambol oelek
- 1/2 cup Balsamic vinegar
- 2 tsp Ginger (grated)
- 270g Hakubaku soba noodles
- 1/3 cup Olive oil
- 2 tsp Olive oil (extra)
- 500g Beef porterhouse or eye fillet steak
- 200g Fresh shiitake mushrooms (finely sliced)
- 1/4 cup Basil leaves (chopped)
METHOD
- Combine sambal oelek, balsamic vinegar, ginger and oil and pour over eye fillet. Marinate for 30 minutes.
- Heat oven-proof fry pan on high heat. Reserving marinade, remove eye fillet and sear for 1 minute on each side. Place in a pre-heated oven (220 degrees Celsius) and roast for 10 minutes. Rest fillet for 10 minutes.
- Cook soba noodles according to packet instructions.
- Heat olive oil in a fry pan on medium heat. Cook mushrooms for 5 minutes, then reduce heat and add reserved marinade.
- Slice eye fillet thinly. Place noodles on four plates and pour over mushrooms. Lay on the beef slices. Garnish with chopped basil leaves.
Note: Swiss brown mushrooms also work well in this dish.
