Sesame Seed Cabbage with Soba Noodles and Lime

Ingredients
270g Hakubaku soba noodles
500g Cabbage (finely sliced)
3tbsp Sesame seeds
2 Spring onions (finely sliced, diagonally)
1tsp Sesame oil
1-2tsp Juice of lime
Lime zest (finely grated) for garnish
Sesame seeds (toasted) for garnish

Method
NOTE:The cabbage you use for this dish is your choice. Examples are savoy, green, bok choy or even a mixture of your favourites.
STEP ONE:SOBA NOODLES
Cook the noodles according to packet instructions.
Drain, then refresh under cold running water.
Drain well, then set aside.
STEP TWO:CABBAGE
Heat the sesame oil, in a wok, over medium heat.
Sautee the spring onion and sesame seeds (stirring) until a couple of sesame seeds pop.
Add the cabbage and cook (stirring) until wilted.
Add the noodles and toss gently to combine.
Heat through, then add lime juice stirring gently to combine.
Remove from heat.
STEP THREE:SERVING
Place cabbage and noodle mixture on a serving platter.
Garnish with a sprinkling of toasted sesame seeds and the lime zest.
