Seared Fillet Steak, Green Tea Noodles and Miso

SERVES: 4  DIFFICULTY: Easy 

Something delightfully different to do with steak

INGREDIENTS

4 Fillet steaks (about 150g each)
Olive oil (for coating steaks)
Salt & pepper (for seasoning)
200g Hakubaku Char soba noodles (green tea)
2tsp Sesame oil
3tbsp Miso paste
80ml Mirin (Japanese rice wine)
4 Spring onions (finely sliced, diagonally)
2tsp Sesame seeds (lightly toasted)
|Cha Soba

METHOD

STEP ONE:FILLET STEAK
Brush steaks with the olive oil and then season to taste.
Heat a large frying pan over high heat.
Cook steaks to your own liking eg: rare steak is cooked on each side for about 3 minutes.
Remove steaks from heat, then cover loosely with foil.
Rest for 5 minutes.

STEP TWO:GREEN TEA NOODLES
Cook noodles according to packet instructions.
Drain, then refresh under cold running water.
Drain well, then place in a large bowl.
Add sesame oil and toss well to coat noodles.
Set aside.

STEP THREE:MISO DRESSING
In a small saucepan, place the miso paste and mirin.
Place over medium heat and whisk until smooth and heated.

STEP FOUR:SERVING
Thinly slice steaks on the diagonal.
To the noodles add the steak slices, miso dressing and the spring onions.
Toss well to combine.
Place in a large serving bowl the sprinkle with the lightly toasted sesame seeds.
