2tbsp Fish sauce
1 litre Chicken stock
Salt and pepper (to taste)
300g Crab meat
180g Hakubaku somen noodles
2 bunches Bok choy (chopped)
3 Spring onions (finely sliced)
100g Bean sprouts
1 Lime (cut into wedges)
Asian-style Crab Noodle Soup
STEP ONE:SOMEN NOODLES
Cook the noodles according to packet instructions.
Drain and refresh under cold water.
Combine the fish sauce, sugar, and a pinch of salt, in a saucepan, with the stock.
Bring to the boil, then simmer gently for 20 minutes.
Add the crab meat and bok choy.
Divide the noodles between 4 serving bowls.
Ladle the soup over the noodles.
Top with bean sprouts and spring onion.
Serve with the lime wedges.
