Ingredients card / Shopping list

270g Hakubaku Organic Soba noodles
1 cucumber, small, julienned
2 shallots, finely sliced
1/2 bunch coriander, leaves picked and stems finely chopped
1 chilli, long red - deseeded and julienned
2 tbsp toasted black sesame seeds
1 lime, zest and juice
1 tbsp ginger, finely grated
1 tbsp honey, thin
1/2 tsp sea salt
3 tbsp tamari
1 tbsp mirin
1 tbsp toasted sesame oil

Serves 3 adults




1. Cook the noodles, then drain and rinse well under cold water then place in a bowl and cover with cold water.
2. Put all dressing ingredients in a jar and add the coriander stems. Screw the lid on tightly and shake well to combine.
3. Drain the noodles and add half the dressing. Add the cucumber, shallots and chilli and most of the sesame seeds and coriander leaves. Taste and adjust dressing and seasoning if needed.
4. Arrange on a platter or in individual bowls and garnish with remaining sesame seeds and coriander leaves.
