Dressing (sanbai-zu)
1/3 cup Rice vinegar
½ cup Dashi (or Shimaya Bonito soup stock)
2 tbsp Soy
1 tbsp Mirin
270g Hakubaku Ramen noodles
2 small Roasted duck breast (sliced thin)
1 medium Red capsicum (sliced thin)
2 hard-boiled eggs (sliced)
1 tbsp Fresh ginger (thinly sliced)
4 stalks Spring onions (cross cut thinly)

Serves 4 adults


Delicious roasted duck breast for a truly luxurious meal - that is so simple to prepare.


Preparation time 15 minutes
Cooking time 5 minutes

1. Boil together the dashi, vinegar, soy and Mirin, cool and set aside.
2. Cook the ramen noodles as per instruction on the packet, cool and hold.
3. Combine together the noodles with the sliced duck, capsicum, eggs, sliced ginger and the spring onion. Add half of the dressing, toss well together and taste. You can add more if required.
